If there was an ideal place that I could look at and say this would be the ideal waymark I would look at El Indio in San Diego, CA. The restaurant was featured on Food Network's "Diners, Drive Ins and Dives" where Guy Fieri went there and saw some of the many dishes that the restaurants produced. Another one that fits the mold of this category for me would be a place Guy also visited in Arizona. It was this small little restaurant that operated out of a gas station which served fresh Hispanic food. Over the next couple of days I will work on some variables and post them here to get some reactions and critiques.
